Homemade Granola

IMG_1402Granola is one of those foods that should never be eaten out of a box. The ingredients that are in store-bought granola completely defeat its purpose as a health food. When you make it yourself, you can add more protein, less sugar and healthy fats to the mix. A much better way to start your day.

5 cups old fashioned oatmeal
1/2 cup finely ground walnuts, almonds or other nuts.
1/4 cup finely ground unsweetened coconut
1/2 cup ground seeds (I use a mixture of pumpkin, sunflower and milk thistle)
1/2 cup whole wheat flour
1 cup wheat germ
1 cup honey
1 cup olive oil, coconut oil, melted butter or any combination thereof
1 tbsp vanilla
Ground cinnamon to taste. I use 1/4 cup in a recipe this size.
1 teaspoon nutmeg
1 cup slivered almonds

Preheat oven to 275 degrees.

Mix the ingredients thoroughly in large bowl. If you’d like to stay away from wheat, use almond meal or other ground nuts in place of the flour and the wheat germ.

Bake in jelly roll pans until golden brown about 30-40 minutes.  I add dried cherries or  other dried fruit  after I bake the granola.

Store in covered container. Great with yogurt for breakfast.
