Allicin is the constituent in garlic which accounts for its antimicrobial properties. It is only present in garlic when the cloves are garlic are crushed and the enzyme allinase is released. Cooking destroys allicin, so if you are trying to get fresh garlic into your diet, here are a two recipes that my kids love.
Hummus
4 cups well-cooked garbanzo beans. or 2 cans (save cooking liquid or reserve liquid in can)
4 Tblsp lemon juice
2 Tblsp tahini
1 Tblsp olive oil
6 cloves minced garlic
1 tsp cumin
1/2 tsp salt
Put ingredients in blender and blend until smooth adding liquid from beans until desired consistency is achieved.
Variations. Add 1/2 cup black olives, or omit cumin and add 1/2 peeled cucumber and 2 tsp minced dill.
Garlic Dip
2 cups sour cream
6 cloves minced garlic
2 tsp wasabi
1 tsp sea salt
Mix these ingredients together and allow to chill for an hour, or two, before serving.
