Wicklow Pancakes

Dinner was good last night. I had a hard time figuring out what to make for Darian as a main dish but I ended up going with the following recipe.
Generally they would probably be more of a breakfast thing but it worked.
The recipe is simple; the key is fresh herbs and patience.  You could pretty easily make it gluten-free by substituting gluten-free bread.

Wicklow Pancakes

4 – 6 eggs depending on size
600 ml of milk
4 ounces of fresh breadcrumbs
chopped parsley
chopped thyme
chopped chives
Salt and pepper
Butter

Beat the eggs lightly, then add the milk, breadcrumbs,
herbs and seasonings, and mix well. Melt the butter in an
ovenproof fry pan, then pour in the egg/breadcrumb
mixture and cook over a low flame until it just set on top.
Put this in the broiler for a few minutes to finish cooking it.

Serve this drizzled with melted butter.
