This is a super simple recipe but I made it for some friends today and they asked me to post the recipe. I like this recipe because infusing the zest adds pectin and other good stuff like rutin from the lemon rinds.
1/2 cup honey or sugar
Zest the lemons into a pitcher with the sweetener. Pour 3 1/2 cups boiling water over the lemon zest and sweeetener. Stir until it is dissolved and let stand for an hour. Juice the lemons into pitcher and stir well. Add a little water if this is too strong. Serve over ice.
