Honey Sweetened Applesauce

This is based on a recipe I got for applesauce sweetened with honey from a blog friend of mine over at Xanga.

She is much more patient than I am and she peels the apples and cores them. I am far too lazy for that. I just cut them into fourths and go….

4 cups of apples cut in quarters
1 cup water
1/2 cup honey
1/4 cup lemon juice
spices

Simmer about 20 minutes or until the apples are mushy.Then run everything through a chinois sieve> or a food mill and put in pint jars. Process in a hot water bath for 20 minutes.
