Dairy-Free Apple Bread

This recipe originally called for butter but I figured out a way to leave the butter out because I have a friend coming who can’t eat it.

Chop 4 cups of apples and mix in 2 cups of sugar. Let this mixture sit overnight in the refrigerator. This will cause the apples to juice up.

In the morning stir in:
3 eggs
1 tsp vanilla
1 cup oat flour
2 cups flour
1 tsp salt
1 tsp baking soda

At this point you may want to add 1/2 cup more flour if the dough is too sticky. This will depend on how juicy your apple mixture became. Divide batter between two greased loaf pans. Bake at 350 degrees for 45 minutes.
