Flat Bread

Naan

Mix the following ingredients and let sit until frothy:

1/4 cup warm water
1 tablespoon active dry yeast
1 tsp sugar

Mix:
1 cup lukewarm water
1/4 cup plain yoghurt
1 beaten egg
2 tablespoons oil ( I use coconut oil but olive oil works also)
1 teaspoon salt

Add this mixture to the yeast mixture in a large bowl and stir in:
five cups of flour ( I use a mixture of white whole wheat and unbleached flour but that is up to personal preference)

Knead the dough for 5 to 10 minutes. It should spring back to it’s original shape when it has been kneaded well. Cover with a cloth and let it rise for an hour.

Start a griddle or a fry pan heating. You want it to be fairly hot. Roll the dough into small balls and roll them flat. Fry naan in a bit of butter or ghee until they are lightly brown and a bit puffy. I think frying them in butter or ghee is key, I have tried other oils but the flavor isn’t as rich.
